In honor of the sweet peanut butter cookies I'm making tonight, I'm re-hashing some of my old web 1.0 content, and posting it to my blog, and to OlyBlog. Have fun, and remember, all things in moderation!

Gluten Free Peanut Butter Cookies by Cosmo G. Spacely

Ingredients

peanut butter 1 cup
sugar 1 cup

Preheat oven to 350 degrees F, (180 C), mix ingredients thoroughly with fork, and spoon out cookie sized blobs on a cookie tin, preferably one lined with tin foil and pre-greased, then place them in the oven until they are done. (Usually between 13 and 18 minutes, depending on your taste, oven weirdness, etc. Make your own judgment, eh?)

Please don't make the mistake of thinking since these cookies are gluten free, they're somehow more healthy than other cookies. These cookies are heavy in fat, cholesterol, calories, and carbohydrates, all of which are bad for you one way or another. Make and eat at your own risk. Cosmo G. Spacely makes no representation of any kind regarding these cookies, not even that they are truly gluten free, (There's no flour, do peanuts have gluten?) Cosmo does think that they are delicious, however. * Nutritional information is estimated, probably largely suspect, but included here anyway, as some kind of penance for putting these tempting cookies on the web in the first place.

Another Olympia coffee culture post... Again hopefully newsworthy stuff for OlyBlog readers.

What is the NWRBC you ask? Well NWRBC stands for the Northwest Regional Barista Competition and Oly was well represented this year with 2 competitors, 2 judges, and 3 local company sponsors. This years NWRBC was held in Portland and was organized and put on by Portland companies Stumptown Coffee Roasters and The American Barista & Coffee School. It was by far the best coffee event I've ever attended and I've lost count of how many I've been to the past 5 years. This event has been the talk of the North American Coffee Community & online coffee forums alike. The whole weekend was a blast and a great showing of Northwest's pride and passion for espresso and Oly was well represented.

The Oly NWRBC Competitors:

1 competitor each from Batdorf & Bronson and Olympia Coffee Roasting Co. None made the top 6 but for both competitors it was their first professional barista competition and they both made excellent showings in what is widely known to be the most difficult region to compete in.

When I was working as a seasonal employee, I had a co-worker from Vietnam. He worked for the City in order to put money into the hotel he owns in Vietnam. At any rate, he fought for the South Vietnamese while the United States was involved in the conflict and told of the torture techniques used by Communist forces once the conflict had been decided (he wasn't fortunate to leave with the Americans). He also told how people started to "disappear." To emphasize his point, he knocked on the wall we happened to be standing next to and said, "This is what you would hear. Then you wouldn't see that person anymore. They would come at night."

In fact, many Vietnamese have trouble trusting government. If I remember correctly, the Lacey police department was offering classes and lectures in order to gain the trust of the Vietnamese community and show that law enforcement at the street level is far and away not going to come to your door in the middle of the night and take you away to never be seen again (that's reserved for the black helicopters, of which I am afraid of too).

Children today are taught from an early age that government is their friend rather than as the greatest enemy to their safety and freedom.
