I've been buying most of my meat locally for the past 5 years. Usually large parts of an animal like 1/4 of a steer or 1/2 of a hog. I've been searching, in vain, for a source of local fresh poultry. I'm not fond of frozen whole birds. I like to portion them out before freezing. This way I can get 2-4 meals for me and my family from one chicken. Thawing, cutting and refreezing is yucky.

This proposal is a great idea for those who want to eat locally. It would increase farmers' profits and make local meat available for those who prefer smaller portions. Federal laws surrounding meat, like most food regulations, favor big business. This is a great workaround for local production.

The article says there are folks on the steering committee from Thurston County. I'd love to know who they are and how to support this effort.

Seafood, at least at the federal level, is regulated by the Dept. of Commerce while birds and mammals fall under the jurisdiction of the Dept. of Agriculture. Practically, the killing of much seafood occurs as part of the gathering process.

MPU's

I watched an episode of modern marvels about slaughterhouses and they talked about the Mobile processing unit up in san juan county. Here is an article written about that one from 2002. http://www.uvm.edu/~ccomstoc/MobileSlaughter.html

I remember of neighbor of my parents

Having one of those mobile units over to butcher two cows he had been raising for meat.  I think it's a great idea.

Just wonderin' if anyone's ever heard of...

...Dr. Temple Grandin? She has designed more humane slaughter faciloites all across the country

and has quite a unique perspective on cows...

Yep, she is part of Michael Pollan's The Omnivore's Dilemma where he discusses the ethics of food production systems.

Another interesting character in the whole ethics of meat debate is Hugh Fearnley-Whittingstall.
